Drizzle olive oil onto the salmon. Season with a dry jerk seasoning. Don’t use the wet marinade seasoning (I have not tested that method with this recipe). If you can’t find a good dry jerk rub seasoning at your grocery store, you can easily make one at home. Jerk Salmon With Honey Mango Salsa

Ahhh…the cast iron skillet. My best friend. I use it whenever I can, with whatever I can. It makes everything taste sooooo much better. Don’t you think? If you aren’t a fan of the cast iron skillet or don’t have one, you can cook your salmon in a regular frying pan or bake it. Using whatever cooking method you are familiar with to cook salmon. If you are using the cast iron skillet, preheat the oven to 450 degrees. Then heat the pan on the stove top over high heat for about 1 minute. Add a little bit of oil to the pan. Place the salmon into the pan (bottom or skin side up), and sear for 1 minute. Carefully flip the salmon over onto its bottom/skin side, then place the cast iron skillet into the oven and roast for 8 to 10 minutes.

Mango salsa time! Easy peasy. Throw all the ingredients for the mango salsa together! I like to chop the mango in smaller pieces while they are still frozen, then I let the mango pieces thaw out before putting all the ingredients together. Which doesn’t take long. For a super duper quick thaw, I run a little water over the mango in a strainer bowl. This will unfreeze it immediately.

I prefer to eat the mango salsa at room temperature, or a little warmed up. When its cold it doesn’t taste the best with the jerk salmon, which would be pretty warm just coming out the skillet. I leave the salsa at room temperature and then just eat it with the salmon when its finished. I refrigerate any left over salmon and salsa. When I reheat the salsa I only put it in the microwave for like 20 seconds.

I got a big salmon (enough for 4 people), and cut it into 4 portions. The salsa will make about 2 cups, and will serve about 4 people. A side of nice fluffy white rice will pair nicely with this dish.

MANGO SALSA
  1. 2 cups frozen mango cubes (thawed, & cut up in smaller pieces)
  2. 1/4 cup red onion, diced
  3. 1/3 cup red bell pepper, diced
  4. 1 tablespoon jalapeno pepper, seeded & diced
  5. 2 tablespoons fresh cilantro, chopped
  6. 1/2 of one lime, squeezed
  7. 1 tablespoon honey
  8. salt and pepper to taste
JERK SALMON
  1. olive oil
  2. dry jerk rub seasoning (here's a 5 min homemade recipe Jerk Seasoning Dry Rub Recipe )
For the Mango Salsa
  1. Thaw mango cubes and cut into smaller pieces if necessary. Mix all ingredients together for the mango salsa in a bowl, stir slowly and gently. Set aside.
For the Jerk Salmon
  1. Preheat oven to 450 degrees.
  2. Drizzle olive oil onto salmon evenly, then sprinkle a generous amount of the dry jerk rub seasoning onto the salmon. Using your fingers, rub the olive oil and jerk seasoning evenly into salmon.
  3. Heat cast iron skillet over high heat for about 1 minute. Add a little bit of oil to the pan.
  4. Place the salmon into the pan (bottom or skin side up), and sear for 1 minute.
  5. Carefully flip the salmon over onto its bottom/skin side, then place the cast iron skillet into the oven and roast for 8 to 10 minutes.
  6. Serve immediately with the mango salsa topped on top of salmon, or on the side of salmon. Pairs nicely with a side of plain white rice.
